Gluten Free Gingerbread Cookies

These delightful little cookies are simple to make and can be made into different shapes to keep both the young and old entertained.
Ingredients

250g Spiced Bread Mix
- 100g dates - soaked in boiling water for 10 minutes
- 100g butter
- ½ c sugar (coconut or brown)
- 1 egg or flax egg
- ½ tsp mixed spice
- 1 tsp ground ginger
Directions
- Drain the dates and blend together in a food processor with the butter to form a smooth paste.
- Add the remaining ingredients and blend until it forms a dough.
- Chill in the fridge for 1 hour.
- Roll out on a silicone mat or baking paper to 5 mm thick.
- Cut into your shapes. Keeping your shapes similar size will allow for even cooking.
- Place cut shapes on a lined baking tray.
- Bake for 15 minutes or until golden at 170 °C (not fan bake). Smaller shapes will take less time to cook so check regularly.
- Cool slightly on the baking tray before transferring to wire rack to finish cooling.
- Decorate as desired. - Remember to check your icing sugar is gluten-free.
