Gluten-Free Waffles

Ingredients
- 2 eggs, separated
- ½ cup extra virgin olive oil, plus extra for greasing the waffle iron
- 2 cups whole milk

1½ cups Sabato gluten-free flour

4 tsp gluten-free baking powder
- ½ tsp salt
- ¼ cup white sugar

maple syrup
Directions
- In a small bowl, beat egg whites until stiff. Set aside.
- Combine egg yolks, EVO and milk in a mixing bowl. Sift in flour, baking powder, salt and sugar and mix gently until combined. Fold in beaten egg whites.
- Ladle the batter into a preheated and lightly greased waffle iron. Cook until golden and crispy.
- Serve with crisp pancetta, whipped cream and a generous drizzle of maple syrup
