Waffles are great any time of the day - one of those dishes that is okay to have for breakfast, lunch and dinner. If you don't have a waffle maker, these can easily be made as pancakes on the stove in a pan.
Ingredients
-
Cup Spicy Fruit Breadmix
-
2 tsp Gluten Free Baking Powder
Tbsp Sugar or 1 Mashed Banana
1 Egg
1 tsp Vanilla Essence
Milk - approx 1 cup
Note: If you would like a more savoury option, change the Spicy Fruit Breadmix to Wholesome Breadmix and leave out the sugar/banana. Sift the Wholesome Breadmix to remove the course flaxseed before adding the wet ingredients.
Directions
Combine the Spicy Fruit Breadmix and baking powder together in a medium bowl.
In a seperate bowl beat together the sugar/banana, egg and vanilla.
Mix together the wet and dry ingredients. Add the milk slowly to combine into a batter.
Leave to rest for a few minutes while your waffle maker heats up.
You may need to add more milk to your batter if it starts to thicken up.
Cook as per your waffle makers instructions or if using the stove top, cook on a gentle heat and flip once small bubbles start to form on the top.
Top with your favourite toppings and enjoy!
If you have extra batter - it can be stored in the fridge for a day, just add milk to get back to a batter consistency.
