Gluten Free Peanut Butter Protein Balls

Ingredients
- 100g coconut oil
- 200g peanut butter (crunchy or smooth is fine)
- 120g maple syrup
- 200g ground almonds
- 120g vanilla protein powder
- 1 teaspoon vanilla paste
Directions
- Mix the ground almonds and protein powder in a large bowl and set aside.
- In a small saucepan, gently melt the coconut oil, peanut butter, and maple syrup until it is fully mixed together and a smooth consistency (if you use crunchy pb it wont be totally smooth if course).
- Pour the peanut butter mixture into the dry ingredients and mix to form a dough. Depending on the protein powder you use you may need to add a little more melted coconut oil to make a workable dough. Some brands may absorb more or less moisture as well as being affected by the moisture in the air on any given day so if the mixture seems too dry and crumbly, just add a little more melted coconut oil until the dough is pliable enough to roll into balls.
- Roll into roughly 20 balls and set in the fridge for at least an hour to firm up.
- Best kept in the fridge especially in the warmer months but great to add to lunchboxes or to grab on the go.
