Gluten Free Carrot Cake

We came across this recipe in the Coeliac Disease Facebook Group and Sharon kindly allowed us to share it on our website.
Ingredients
2/3 cup oil (olive)

1 cup GF flour (not baking mix)
1 cup LSA
2 tsp baking soda
3 eggs

1 cup coconut
1 1/2 cups sugar

2 tsp cinnamon
2 tsp vanilla
1 tsp salt
2 cups grated carrot
1 cup crushed pineapple in juice not syrup (well drained)
100g cream cheese
1/2 cup softened (not melted) butter

1 cup icing sugar
Icing
Directions
Throw everything into a mixing bowl, beat until well mixed. Pour into greased baking tinBake 180 -190° until golden brown and firm, (about 1 hour)
Icing
Cream together till fluffy and smooth
Ice cake when cool, sprinkle with chopped walnuts
