Gluten Free Fantastic Fritter Mix
Grate your courgette, salt it and then let it sit for 10 minutes. After 10 minutes, drain excess moisture out by squeezing the courgette over the sink or a tea towel.
Dice your spring onion and grate your cheese.
In a medium-sized bowl, combine your courgette, onion, cheese and a bit of garlic.
In a separate bowl mix about 3 tablespoon's Fantastic Fritter Mix with enough water to form a creamy consistency.
Combine both bowl's together to make your fritter mix ready to fry.
Heat oil in a fry pan (about 3 mm deep) until very hot.
Dollop spoonfuls of the fritter mix and cook for a few minutes on each side until golden brown.
Serve with a side salad and dipping sauce of your choice!
